A delightful recipe to put a new lemon twist a chicken recipe. Sometimes chicken breast can be a little dry and tasteless but this is a great way to spice it up and keep it moist. Serves 2-3.

I used one pound of ground beef and made six meat muffins. So three would be eight ounces. In Canada I know you're allowed to have up to eight ounces these days. In the US though we can only have between four and six.

We went to Mexico for the first time some years ago and I was taken by the fresh salsa they served with every meal. This Salsa recipe is the closest I could find to the authentic Mexican dish we enjoyed on vacation.

Adapted from a delicious recipe from another low carb diet, if you love regular chicken poppers this is a fantastic healthy substitute. If you do not like zucchini let us know in the comments what we could use instead.
